The Freeze Drying Process
Also known as lyophilization, freeze drying is a high-quality method of food preservation that happens in three key stages:
- Freezing
The food is frozen to an extremely low temperature. - Primary Drying
Pressure is lowered and gentle heat is applied. The ice in the food turns directly into vapor (a process called sublimation), removing about 95% of the moisture. - Final Drying
A higher temperature is used to remove any remaining bound moisture.
🕒 Depending on the product and moisture levels, each batch takes between 20 and 60+ hours to complete.
Packaging & Storage
All of our products -excluding candy-are carefully packed in mylar bags with oxygen absorbers to ensure long-lasting freshness.
When stored in a cool, dry place, many items can last up to 25 years.
